Mini Sticky Date Puddings

Alex's Mini Sticky Date Puddings are the ultimate sweet treat, not made to be shared. They’re gooey, indulgent and perfect for curling up on the couch during these cold winter nights.

Prep time: 30-40 mins
Cook time: 25-30 mins
INGREDIENTS
For the puddings
- 280g pitted dates (around 1 cup)
- 1 tsp bicarb soda
- 1 cup boiling water
- ¼ cup brown sugar
- 5 tbsp unsalted butter
- 2 eggs
- 1 ¼ cups all-purpose plain flour
- 1 ½ tsp baking powder
For the butterscotch sauce
- 1 cup brown sugar
- 1 ½ cups thickened cream
- ½ tsp vanilla extract
- 5 tbsp unsalted butter
Other
- Vanilla bean ice cream (to serve)
METHOD
- Start by softening the dates in a mixing bowl with baking soda and boiling water until tender.
- In a separate bowl, beat together the butter and sugar until light and creamy.
- Combine the remaining ingredients and fold through the softened dates to create the batter.
- Grease and then spoon the mixture into the Stoneware Mini Casseroles.
- Bake until the puddings are risen and perfectly cooked through.
- While the puddings are baked, prepare a rich butterscotch sauce on the stovetop.
- Make small incisions in the puddings and brush generously with the warm butterscotch sauce.
- Finish with a scoop of ice cream and extra butterscotch before serving warm.
