Classic Beef Ragu Lasagne

Alex's Beef Ragu Lasagne is a twist on a hearty classic, with the ragu being slow cooked in Baccarat® Le Connoisseur™ Round French Oven to create a deep, rich flavour. It’s the ultimate winter warming dish to share with family and friends (although you won’t want to).

Prep time: 20 mins
Cook time: 2.5 hours (Roughly 2 hours for sauce in oven, 30 mins lasagne assemble and baked in oven)
INGREDIENTS
For the beef ragu
- Extra virgin olive oil
- 1 brown onion
- 2-3 garlic cloves
- 2 celery stalks
- 2 carrots
- 750g beef chuck
- 800g tomatoes (whole peeled)
- Beef stock/beef stock cubes
- 250ml red wine
- 1 tomato paste (tube)
- 3-4 bay leaves
- 1 packet thyme
- Salt & pepper
For the bechamel sauce
- Butter
- Flour
- Milk
- Nutmeg
- Salt
- Pepper
Other
- Fresh lasagne sheets
- Mozzarella, grated
- Parmesan, grated
- Basil leaves, torn
METHOD
- Preheat the oven. Heat a large casserole dish or Dutch oven over medium-high heat and sear the beef until deeply caramelised and rich in colour. Remove and set aside.
- Build the ragu by cooking the vegetables and aromatics, then adding the remaining sauce ingredients. Allow the flavours to develop together on the stovetop.
- Return the beef to the sauce, cover, and transfer to the oven. Slow cook until the meat is tender and easily falls apart. Shred or break up the beef and stir through the sauce.
- While the ragu is cooking, prepare the béchamel sauce. Cook until smooth, creamy and lump-free, then set aside.
- Lightly grease your Le Connoisseur stoneware lasagne dish. Begin layering with ragu, followed by béchamel and pasta sheets. Repeat the layers until the dish is full, finishing with a layer of béchamel on top.
- Generously sprinkle with cheese and bake until bubbling, golden and beautifully crisp on top.
- Remove from the oven and allow the lasagne to rest for 10–15 minutes before slicing. Serve warm and enjoy the ultimate winter comfort meal.
