Chocolate Chip Skillet Cookie

Alex's Chocolate Chip Skillet Cookie is the perfect winter dessert that is warm, gooey and dangerously hard to share, made in the Baccarat® Le Connoisseur™ Cast Iron Frypan for crispy edges and a soft, chewy center.

Cook time: 25 mins
INGREDIENTS
- 250g unsalted butter
- 1 cup brown sugar
- ½ cup white sugar
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- 2 eggs (1 large egg, 1 egg yolks)
- 2 tsp vanilla extract
- 1 cup dark chocolate chips
- 1 block lindt dark chocolate, roughly chopped/broken
- Sea salt flakes (sprinkle)
- 1 tub vanilla bean ice cream
- Butter (buttering skillet)
METHOD
- Begin by browning the butter directly in the Cast Iron Frypan until nutty and golden.
- Stir through the sugars while the butter is still warm until smooth and glossy.
- Crack the eggs directly into the pan and stir to combine. Add vanilla and stir again.
- Bring the batter together by gradually adding the flour, baking powder and soda, then fold through plenty of chocolate chips.
- Spread the cookie dough in the skillet and top with extra dark chocolate chunks.
- Bake until golden around the edges with a soft, gooey center.
- Serve warm straight from the skillet with a scoop of ice cream.
