Creamy Roasted Tomato Soup
Fresh, sweet tomatoes and garlic air-roasted until caramelised, blended with fresh herbs for a velvety, warming homemade soup, featuring the Baccarat The Healthy Fry Compact Air Fryer 5.7L.

INGREDIENTS
- 6 large tomatoes, halved
- 2 cloves garlic, crushed
- 2 shallots, peeled and halved
- 2 sprigs basil
- 2 tbsp extra virgin olive oil
- Flaked sea salt and pepper, to taste
- 1 cup hot chicken stock
- 2 tbsp cream, to serve
METHOD
1. Preheat the air fryer to 180°C.
2. Place the tomatoes, cut side up, into the base of the air fryer. Add the garlic, shallots and 1 sprig of basil. Drizzle over the olive oil, season to taste, then select the VEGETABLE function. Cook for 30 minutes or until the tomatoes have collapsed and have started to brown.
3. Transfer the mixture to a blender, add the remaining sprig of basil and the hot stock and blend until smooth. Season to taste then divide the soup between two serving bowls, drizzle with cream and serve with toasted cheese sandwiches for dipping. Enjoy!
